According to Mwaruwa (2016), nutrition is a major influencing factor in overall health and an affordable means of primary prevention as well as management (secondary prevention) of many chronic diseases. Nutritional deficiency and nutritional excess play a major in the development of diseases such as osteoporosis, malnutrition, anemia, diabetes, some cancers, and heart disease (Mwaruwa, 2016) – to name a few. Many of the chronic disease prevalent in our society are attributed to poor diet and nutrition (Grand Canyon University, 2018); indicating that nutrition remains a challenging barrier to overcome.
Some of the challenges are internal and reflect a person’s willingness and desire to meet their individual nutritional needs, other challenges are related to culture. Various cultures view nutrition differently; their dietary intake may be influenced by historical and geographical associations, what their culture perceives as “healthy” foods, storage and preservation (or lack thereof) of foods, spiritual and ritualistic influences may also be a nutritional influence (Grand Canyon University, 2018).
